While I was living in Ottawa, I used to visit this cute family owned grocery store almost every week. They had a section with house-made salads, sandwiches, and meals-to-go (I don't know about you but I love looking at those sections in small grocery stores). One salad was a beet and carrot slaw with a tangy dressing. It was so simple and became my absolute favourite. I looked forward to picking it up, then started making it at home. I use goji berries in my version (I rehydrate them because they are usually quite hard), they used raisins. I like both so feel free to use raisins if that's what you have on hand. 

This salad is great for spring, summer, whenever! It's naturally sweet, crunchy, and delicious! It also holds up very well in the fridge making it a nice addition to weekly meal prep, you just might want to wait on adding the hemp hearts/sunflower seeds so they don't get soggy. It's easy and quick to prepare, especially if you have a mandolin. I julienned everything by hand and it didn't take too long -  I just turned on some relaxing music and saw it as an opportunity to practice my knife skills. :)

Carrot, Beet, & Apple Salad

Ingredients

For the salad:

  • ¼ cup dried goji berries (or raisins)
  • 2 cups julienned carrots
  • 2 cups julienned beets
  • 1 gala apple, cored and julienned (about 2 cups) 
  • ¼ cup roughly chopped parsley
  • 2-3 sprigs fresh mint leaves
  • 2 tablespoons hemp hearts
  • 2 tablespoons sunflower seeds
  • Salt and pepper to taste

 

For the dressing:

  • 3 tablespoons tahini
  • 2 tablespoons apple cider vinegar (or rice vinegar)
  • 2 tablespoons water
  • ½ tablespoon maple syrup or 1 medjool date (optional)
  • 1 clove garlic, minced
  • Salt to taste

 

Method

  1. In a cup, combine the dried goji berries with just enough hot water to cover. Stir and allow to sit for 20-30 seconds to soften and rehydrate. Rinse with cold water and set aside. (if you are using raisins, skip this step)
  2. Combine the julliened carrots, beets, apple, parsley, and mint in a large bowl or on a serving plate.
  3. Sprinkle with hemp hearts sunflower seeds and goji berries. Before serving, add the dressing and toss to evenly coat. Season with salt and pepper, and an extra drizzle of vinegar to taste.
