I've made this recipe a few times, always adjusting the amount of chipotle powder. I don't know if it's just the brand I bought, but It's so spicy it almost burns my face off. so feel free to adjust the chipotle to your own spicy factor (I'm a wuss clearly).

The mayo portion of the recipe is one that I make regularly. It's garlicky, just the way I like it. There will be leftovers ! I also use this mayo dip for grilled sweet potato wedges or with chicken throughout the week!

Crispy Chipotle Green Beans & Garlic-Lime Mayo

Ingredients

Garlic-Lime Mayo
  • 1/2 cup Homemade Paleo Mayo
  • Juice and Zest of 1 Small Lime
  • 2 Cloves Garlic, Minced
  • 1/2 tsp ground cumin
  • 1Tbsp Chopped Cilantro 

*Combine All Ingredients*

Green Beans
  • 1 lb Green Beans
  • 1 Tbsp Olive Oil
  • 1 Tbsp Nutritional Yeast
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp Chipotle powder
  • Salt and Pepper to taste
  • 3-4 Tbsp Garlic-Lime Mayo
  • Cilantro to Garnish (optional)

Directions

  1. Preheat oven to 450 degrees F.
  2. Combine nutritional yeast with spices.
  3. Place green beans in a large bowl. add olive oil and mix to coat. sprinkle in all of the spice mixture and toss. make sure everything is coated! 
  4. On a baking sheet lined with parchment paper, spread the green beans out. Try not to overlap them, or having them squished together. otherwise they won't crisp up as well! bake for 30-35 mins until they look crisp and brown around the edges. Remove from the oven and let stand for at least 5 minutes before serving. drizzle with garlic lime mayo and some chopped cilantro!
