Super easy summer meal idea ! When I made this, it actually took a total of 20 minutes. I personally like to flatten out my chicken breast with a meat tenderizer/ mallet. Whatever those things are called! It just cooks way faster that way. Great for summer if you don't feel like heating up the house. feel free to add a chopped hot red pepper to the salad or a jalepeno!

Hearts of Palm Salad W/ BBQ'd Chicken

Serves 4

Ingredients

For the Chicken
  • 4 chicken breasts, flattened about 1" thin
  • 1/2 cup Paleo BBQ sauce (Or Homemade. I use Tessemaes)
For the Salad
  • 1 400 ml Can Hearts of Palm, drained, and chopped
  • 1 Red pepper, chopped
  • 1/4 of a medium red onion, sliced thin
  • 1/2 large cucumber, diced
  • 10 orange cocktail tomatoes, quartered (Or 2 big red tomatoes)
  • Juice 1/2 lemon
  • 1 Tbsp Extra Virgin Olive Oil
  • Salt and pepper to taste
  • 2 Tbsp fresh chopped parsley

Method

  1. Heat your BBQ to medium Heat, and coat your flattened chicken breasts with BBQ sauce of choice. Grill chicken about 5 minutes per side or until cooked through, brushing with the leftover bbq sauce. remove from the BBQ and let rest for 5mins.
  2. Combine all the ingredients for the salad, dress with the squeeze of lemon, and EVOO. season with salt and pepper and garnish with fresh chopped parsley! Enjoy.
