Have I ever told you that 3 out of the 5 people in my family have very serious allergies to nuts? Myself and my mom are the only two that are okay with them. This means that growing up we rarely had nuts/nut butters in the house and me and my mom got to eat ALL of the nut-containing halloween candy that my sisters couldn't eat (heh heh).  We're older now, but the same rules still stand and because I want to include everyone and have them try food that I make, I find myself making more nut allergy friendly treats and meals.

So instead of adding everything in at the same time, I like to put the "sticky" ingredients in first. Wet ingredients? You know what I mean! The stuff that make the bites hold their shape! I find combining those ingredients first to make a paste, makes it easier to just pulse the other ingredients in to combine everything.  In go the medjool dates, sunflower seed butter, and coconut butter. You can substitute coconut oil for the coconut butter if you have that on hand, and any other nut/seed butter if there are no allergies in your family! Pretty much works with anything! Another tip I'd like to add is that make sure the medjool dates you purchase are fresh, soft and chewy. They will blend so well and have the richest caramel flavour!

After a paste is formed, all you have to do is throw in the remaining ingredients and purse to combine! Make them however small/large you'd like I did around 1 heaping tablespoon her bite and then rolled them in different toppings! Hemp hearts, toasted sesame seeds, and shredded coconut are great options ! This batch made 28 smaller sized bites. I like to have these on hand for a snack between meals, pack them for hikes or before a long walk with my dog, or as an evening sweet treat! Freeze them on a cookie tray, then pop them into a ziplock bag. Store in the fridge or freezer!

Nut-Free Energy Bites

Makes 28 small bites

Time: 20 mins

Ingredients

  • 8 Large medjool dates, pitted
  • 1/2 Cup sunflower seed butter
  • 1/2 Cup coconut butter (or solid coconut oil)
  • 1/2 Cup sunflower seeds
  • 1/4 Cup toasted sesame seeds 
  • 2 Tbsp cacao powder
  • 2 Tbsp raw cacao nibs
  • 4 Tbsp ground flax
  • 2 Tbsp chia seeds
  • 2 Tbsp collagen peptides (or your favourite protein powder) 
  • 1/2 tsp cinnamon 
  • 1 tsp vanilla extract 

For Rolling: Shredded coconut, toasted sesame seeds, hemp hearts

Method

  1. In a food processor, combine medjool dates, sunflower seed butter, and coconut butter (or oil). Pulse until paste is formed. 
  2. Add the remaining ingredients and pulse until fully combined. Shape into small sized bites with your hands and roll in toppings of your choice.
  3. Organize on a baking tray and place in the freezer to set. Transfer to a ziplock freezer bag and store in the fridge or freezer. Enjoy throughout the week!
