Spicy Shrimp Lettuce Wraps with Mango Slaw

 

serves 4

Ingredients:

For the Mango Slaw:

  • ⅓ cup mayonaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon coconut aminos
  • ½ package coleslaw mix (about 4 cups)
  • ¾ cup diced fresh mango
  • 2 tablespoons chopped cilantro, plus more for serving
  • salt and black pepper, to taste

 

 

For the Shrimp:

  • 1½ pounds shrimp, tailed removed, peeled and deveined
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoon smoked paprika
  • ½ teaspoon chipotle flakes (for me, this is medium spicy, add more or less to suite your spice tolerance)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon salt
  • 1½ tablespoons avocado oil
  • lime wedges, for serving
  • butter lettuce, for serving

 

Method:

  1. In a medium bowl, whisk the mayonnaise, vinegar, and coconut aminos together until smooth. Add the coleslaw mix, fresh mango, and cilantro and fold together. Season with salt and pepper to taste. Set aside
  2. Add the shrimp to a large bowl with the minced garlic, and sprinkle with the spices and salt. mix well.
  3. Add the oil to a large skillet over medium-high heat. Carefully add the shrimp and cook for 2 minutes per side, or until shrimp is pink and opaque. 
  4. Serve the shrimp with the coleslaw on it’s own, or wrap in butter lettuce. Add a squeeze of time over the top of the shrimp, and sprinkle with more cilantro to serve.
