After work today, I wanted something fresh and light for a late lunch! I stopped by a seasonal market down the road from my house, called Cramptons! I bought some local spinach, red pepper, some mandarins, and a couple other things. I love fresh local produce and supporting locally owned businesses when I can as our growing season is so short here in Manitoba!

Buck Naked Kitchen - Spinach & Mandarin Salad + Zesty Green Dressing

This salad combo has become one of my favourites as of lately. Actually, I'm more just obsessed with putting mandarin oranges in all of my salads... Something you may have noticed if you follow my Instagram page! To this salad I added leftover chicken breast and some hemp hearts/black sesame seeds on top! There's just something about sweet and savoury that I LOVE so much, and this dressing is what brings the savoury element!

Spinach & Mandarin Salad + Zesty Green Dressing

Serves 2

Time: 20 mins 

Ingredients

Salad
  • 2 Handfuls Fresh Spinach (about 3 cups)
  • 1 Red Pepper, Sliced Thin (I spiralized mine)
  • 2 Mandarin Oranges, peeled and sliced
  • 1 Cup Sugar Snap Peas
  • 2 Mini cucumbers, sliced thin 
  • 1 Tbsp Hemp Hearts (optional)
  • Sesame Seeds (optional)
Dressing
  • 1/2 Cup EVOO
  • 1/4 Cup Red Wine Vinegar
  • Juice of 1/2 Lime
  • 1 Tbsp Coconut Aminos
  • 2 Cloves Garlic
  • 4 Tbsp Fresh Chopped Parsley
  • 2 Tbsp red onion, chopped
  • 1 Pitted Medjool Dates - or tsp honey
  • Pinch Cayenne
  • Salt and Pepper to Taste

Method

Salad
  1. Combine/Arrange ingredients and split between two plates. Sprinkle with hemp hearts and sesame seeds if you'd like. 
Dressing
  1. Throw all the ingredients into the blender! no fuss. Blend until creamy and smooth. 
  2. Drizzle dressing over salads and enjoy! There will be leftover dressing to use up over the week!
